I think this has to be one of my favorite blog posts to write about so far. Ice cream sandwiches make me happy. And ice cream sandwiches that are gluten-free, dairy-free and free of most common allergens, make me even happier.
These ice cream sandwiches are fairly easy to make, and they do taste just like the ones I enjoyed during my childhood.
How to Make a Gluten-Free, Dairy Free Ice Cream Sandwich
I’ve made these sandwiches with a ice cream sandwich maker and without, and I think it’s just a bit easier with the ice cream sandwich maker. The ice cream sandwich maker I used for this post is the Norpro Ice Cream Sandwich Maker. You don’t have to use an ice cream sandwich maker. You can use a rectangle cookie cutter or a large round cookie cutter, and make the sandwiches yourself. I prepared them like that before I started using the sandwich maker.
Bake up the Chocolate Wafers recipe on pages 279 – 280 of my cookbook, Celeste’s Best Gluten-Free, Allergen-Free Recipes or any cookie recipe. I find the thinner you can roll out the cookie dough, the better. I roll mine out to 1/8-inch thick. Cut the cookies into the desired shape for the sandwiches. Let the cookies completely cool.

Set out a piece of parchment paper.
Step 4 – Begin Assembling the Sandwich
Place the white base of the maker on the parchment paper. Then lightly insert the clear plastic piece on top of it. (And I do mean “lightly” – otherwise it will be very difficult to remove the ice cream sandwich after assembling.)
And voila! You have a gluten-free, dairy-free ice cream sandwich!
