Almost any layer cake recipe can often be used to make cupcakes instead. But certain recipes seem to fair better than others when made into these little “fairy cakes” as they were once called. This recipe produces a light, airy cupcake with just the right amount of dome shape at the top for frosting. But I have to tell you, these little cakes taste so good unfrosted, you’ll have to frost them quickly before they disappear!
This recipe can be found on page 311 of my cookbook, Celeste’s Best Gluten-Free, Allergen-Free Recipes.
