An empanada is a stuffed or filled pastry that is baked or fried. The name comes from the Spanish verb, empanar, meaning to wrap or coat in bread. Personally, I think these are amazing and taste like they were made with a gluten filled dough.  One of our favorite fillings is the Beef Empanada Filling (see pages 104 – 105).
