I often use the Norpro Ice Cream Sandwich Maker to make my own gluten-free, dairy-free ice cream sandwiches. Such a treat for our family.
I prepare the Chocolate Wafers recipe on pages 279 - 280 of Celeste's Best Gluten-Free, Allergen-Free Recipes and then roll out my cookie dough and use the cutter to cut the cookies as opposed to baking all the dough and then cutting it out as the instructions recommend. Less waste that way. Then I prepare dairy-free ice cream from my cookbook or from my ebook, Celeste's Best Gluten-Free, Dairy-Free Ice Cream and Frozen Desserts.

One trick to help someone using this is to be sure when you begin making the sandwiches to only lightly press the white piece into the mold, otherwise it's a bit difficult to remove it when you've finished assembling the sandwich.
