For many, many years and through all my trials before the cookbook was published I baked my bread in the Pyrex glass loaf pans. I have several of these.
But last year for Christmas my daughter bought me a pair of the Norpro Loaf pans. I normally don't use nonstick pans but I made the exception with these. The 8-inch size bakes up such a perfect loaf of any of my gluten-free bread recipes. The pan is just slightly smaller than the Pyrex pans and that works better for my gluten-free loaves.
