Don’t let the amount of ingredients in this loaf intimidate you. The small amounts needed for the amaranth, teff and quinoa flour can be quickly thrown together. Using these nutrient rich grains creates a wonderfully healthy multi-grain loaf of bread packed with protein and fiber. And our whole family loves the taste!
The trick to getting the greatest rise out of this bread is emulsifying the eggs with an immersion or stick blender before adding them to the remaining ingredients.
