New Year's Day Gluten-Free Breakfast
A tradition in the Clevenger house is Fried Oysters on Christmas and New Year's Day morning for breakfast. It's something we all look forward to and since we're a family that doesn't often eat fried foods, we especially enjoy them.
Gluten-Free Fried Oysters
My husband is the Master of Fried Oysters. And they're really pretty simple to make. We usually use a pint of oysters already shucked and generally figure on a pint a person, unless you plan on eating anything else with the breakfast.

Step 1
Add a 1/2 cup of Celeste's Best Gluten-Free Flour Mix plus 1/2 teaspoon salt and 1/4 teaspoon pepper to a zippered plastic bag for each pint of oysters used, and gives it a good shake or two.

Step 2
Drain the oysters in a colander to remove excess liquid and also check for any pieces of shell.

Step 3
Heat over medium-high heat 1/2 cup of oil in a non-stick pan. Dip the oysters a few at a time into the bag of flour mix and coat well. Then test the oil by placing a small piece of floured oyster into the pan and checking to see if it bubbles. Then when oil is sufficiently heated, add a single layer of oysters to the pan.

Step 4
Cook for approximately 10 - 12 minutes on each side or until browned and golden. Then remove and allow to drain on a plate covered with paper towels to remove excess grease.

Step 5
Place on a plate and serve with ketchup or your own topping. Best served warm, but also good chilled and cold.
