Stuffed Peppers

For many years, I was unable to eat peppers.  Their tough skins would often give me stomach discomfort.  Then my husband began farming for a new farm that grew beautiful organic bell peppers.  These peppers had a thinner, more digestible skin.  I couldn’t believe that I could once again eat peppers and began adding some of my favorite recipes to the cookbook including this one.
